    Exercising in the Heat

     

    It seems like it’s been weeks since the high temperatures here have been less than 90 degrees. Exercising outside is important for many reasons. Exercising safely is more important. Here are some tips from expert and triathlete Dr. John Mercer, professor of sports medicine at the Univ. of Nevada-Las Vegas.

     

    “The key to acclimatizing to a hot environment is to start slowly and gradually increase.” If your normal workout is a 3-4 mile run start with a 1-2 mile walk.

     

    The details:

     

    Try not to exercise between 10-4 when the sun is its hottest.

     

    Wear loose fitting clothes that allow sweating.

     

    Drink water before, during (every 10-15 minutes) and after exercising.

     

    Drinking during biking is extra important because you may not notice any sweat to signal how hot your body is getting.

     

    Overheating is dangerous and can lead to muscle cramps and heat exhaustion.

     

    (Did You Know? In humid environments sweat doesn’t evaporate as well so watering down your clothes doesn’t help as much as cold, wet clothes on wrists or back of neck.)

     

    Beware that children and animals overheat more quickly and may need hydrating sooner.

     

    After, not only hydrate but also consume carbohydrates. Sports drinks, milk, and as the commercial says chocolate milk are good to replenish the body.

     

    Other good workout snacks include pretzels, trail mix, nuts, peanut butter and fresh fruit (which also has water content).

     

    LA DOLCE VITA, JOIE DE VIVRE:

     

    Eggplant Parmesan (and not the gooey kind but plenty of flavor)

    Preheat oven to 400 degrees. In a large skillet, heat 3 Tbls olive oil, add 1 finely chopped onion and 3 finely chopped garlic cloves. Cook 5 min. Hand crush into skillet 2-28 ounce cans of peeled Italian tomatoes. Simmer until sauce is thick, about 25 minutes. Meanwhile in another large skillet heat ¼ inch olive oil and add 8 small eggplants cut lengthwise, ½” thick. Cook til golden, about 4 minutes a side. Spread 1 cup of the tomato sauce in a 9 x 13 baking dish. Arrange 1/3 of fried eggplant on sauce and sprinkle with 1 Tbls fresh basil, 1/3 of a pound of shredded mozzarella cheese and 1/3 cup of freshly grated Parmigiano-Reggiano cheese. Repeat this two more times then add 3 Tbls. dry bread crumbs to the top. Bake in the upper third of the oven for 45 minutes. Next time we’ll try with crumbled Italian sausage. -Food and Wine Magazine
