Mused after reading that coffee drinking is linked to heart benefits. Up to 5 cups or 400 milligrams of caffeine are safe for most adults. It is linked to a lower risk of heart disease, stroke, and Type 2 diabetes according to the American Heart Association. Bonus recipe: making a homemade coffee smoothie from Bobby Flay’s recipe. Put leftover coffee in ice cube trays and freeze. Add cool coffee to a blender with the frozen coffee ice cubes. Use enough to make it as thick as you want. Add cream, Kahlua, and/ or Bailey’s. Blend and enjoy. Great for brunch.
PACKING LUNCHES FOR KIDS, YOURSELF, AND OTHERS

I bring my lunch to work every day. I’m a creature of habit (I ate salami-and-ketchup sandwiches every day in grade school). Making lunch is easy for me because of this (now it’s turkey sandwiches with hummus, yogurt, an apple, and unsweetened iced tea). Regardless of how you do it, a healthy diet pattern is associated with better academic performance in school and job performance at work. A wholesome, variety-filled lunch contributes to this.
Packing doesn’t have to be a burdensome activity. It can be done while eating breakfast, packing the night before, or while doing another activity. The key is to shoot for a variety of healthy, balanced foods. Vegetables, fruits, proteins, nuts, grains, and unsweetened yogurt are all easy to put together. Leftovers from a previous dinner can make packing go even faster.
(Did You Know? A bento-style lunchbox has different compartments for food. A set or two of utensils and a stash of napkins come in handy.)
Some will prepare their nightly meals over the weekend for the following week, and it’s an ideal opportunity to just plan on making extras for lunch. Other things, such as hard-boiled eggs, sliced hard cheese, and pre-cut vegetables, take a few minutes to make for the week. Larger containers of crackers, trail mix, seeds, and nuts can be put in plastic bags for the week. (Or just buy them in individual containers.)
So, pack a nutritious lunch, carry a refillable water bottle, mix and match for variety, and keep it cold if perishable.

Chicken, Tomatoes, Onions
Weeknight meals need to be fast and easy. I don’t know about you, but at the end of the day my energy level is ebbing. So here is an easy, fast recipe from Food and Wine Magazine.
Whisk together 1 cup olive oil, 6 Tbsp. vinegar, 1.5 tsp. oregano, a grated clove of garlic, .5 tsp. salt and .25 tsp. pepper in a bowl. Add 8 oz. of cherry tomatoes, 2 cups of diced large tomatoes, and 1 medium red onion thinly sliced. Let marinate at room temperature while you cook the chicken. Grill or pan-fry 2 lbs. of chicken breasts, rest for 10 minutes, then cut into bite-sized pieces. Add to tomatoes and onions and serve with crusty bread. Artichokes, feta cheese, and kalamata olives are good in it too. It’s also good the next day, cold, for lunch packing.
