    Picking Pastas

     

    The Basics:

    Pasta is made from milled durum wheat.   Processing the wheat to make refined flour removes the bran and germ, leaving only the starchy endosperm.  This process strips away most of the fiber.  When the flour is kneaded with water, a gluten protein matrix forms around the starch which leads to a slower digestion and feeling fuller.

     

    Whole wheat pasta retains most of the bran and germ which has more fiber and andiron.  Pastas made from lentil flour may be considerably higher in protein.  Other pastas like those made from corn or rice lack the gluten-protein matrix which may be helpful for those following a gluten-free diet.  “Vegetable” pastas tend to be wheat based and are dyed with dried vegetables or vegetable solids.

     

    Bottom Line:

     

    Choose whole wheat

    Portion your servings

    Top your pasta with healthy choices

    Check the labels for “whole grains”

    Go for natural fibers

    Consider alternative pastas

     

    LA DOLCE VITA, JOIE DE VIVRE:

    Peaches are in season and here are two recipes:

    Bourbon Peach Lemonade:  Peel and slice half a peach.  Add juice from half a lemon and a Tbls of honey.  Muddle.  Add 4 oz. bourbon and 16 oz. lemonade.  Add ice.  Makes two drinks.

    Cucumber and Peach Salad:  Combine 2 lb. sliced cucumbers, 1 English cucumber, and 2 sliced yellow peaches.  Make a vinaigrette of 1 shallot, juice of 1 lemon, 2 Tbsp of wine vinegar (prefer white) and salt.  Pour vinaigrette over cucumbers/peaches.  Top with 4 oz. feta cheese, a handful of torn basil and mint leaves.  Squeeze more fresh lemon on.

    1. How did you come to McKenna Cosmetic Surgery?
      A. Well a long time ago…approximately 14 years…I was an employee at Tri-Health Fitness and Health Pavilion. Several of the skincare nurses from Dr. McKenna’s office came to the spa at the Pavilion once a week to offer medical facials. After getting to know them and meeting Dr. McKenna I became interested in learning more about plastic surgery and skincare. I mentioned to the nurses that if there ever was an employment opportunity to let me know. Soon thereafter a patient coordinator position became available and I was fortunate enough to become a member of the staff.
      Q. What other jobs have you had?
      A. I was a legal secretary/legal assistant for 20+years.
      Q. Your most unusual job?
      A. While in high school I worked at the Ponderosa Steak House wearing a cowboy hat. Yeehaw!
      Q. What is your favorite thing to do?
      A. Hike, travel, spend time with my husband and family, especially our three grandchildren.
