CELIAC DISEASE AND GLUTEN
Celiac disease is an autoimmune condition in which people develop an immune reaction to gluten. Gluten is a protein that appears in any food containing wheat, barley, or rye. The immune system reaction results in inflammation and damage to the lining of the small intestine.
This can lead to medical complications, including stomach pain and failure to absorb nutrients. Which, in turn, can lead to bloating, diarrhea or constipation, weight loss, rashes, fatigue, brain fog, joint or muscle pain (remember it’s an autoimmune disease), irregular menstrual periods, and deficiencies in iron, vitamin D, vitamin B12, and folic acid.
Celiac disease has increased 4 to 5-fold over the last four decades, probably from an increased ability to diagnose it. The prevalence (about 1% of the global population) has begun to level off.

About 30% of those with celiac disease do not get better with a gluten-free diet. This is possibly due to inadvertent contamination of food with gluten during processing or preparation. While those without celiac disease eat on average 7,500-10,000 milligrams of gluten, those with the disease typically need to stay below a 100-milligram threshold. Of course, this varies per individual. A simple communion wafer was enough to perpetuate one person’s symptoms.
There are a number of treatments that are being tested. Many can be diagnosed by a simple blood test. Other tests include an enzyme to help digest gluten, a drug to reduce the leakiness of the gut, a vaccination to prevent celiac disease, an antibody that blocks the autoimmune response to the body, and nanotechnology to reprogram the immune system.
Tips for controlling celiac symptoms include:
1. Designate specific areas in your kitchen to prepare gluten-free food.
2. Shop smart by getting more items like fruits, vegetables, meats, and dairy products. Eating processed foods opens the door to gluten contamination.
3. Stock your pantry with gluten-free flour, pasta, and baking mixes.
4. Examine labels as gluten may be hiding in boxed or prepared foods.
5. Seek guidance from a registered dietitian.

A Gluten-Free Meal: Turkey Meatballs with Broccoli & Pesto Sauce
Combine one pound of turkey sausage removed from casing with one pound of ground turkey. Roll into meatballs and bake at 350 degrees for 40 minutes. For the sauce, take one room-temperature 8-ounce block of cream cheese, 2 cups thawed frozen broccoli, ¼ cup jarred pesto, and one tablespoon Italian spices. Combine in a blender. Prepare gluten-free gnocchi or fusilli according to the package directions. Combine with cooked meatballs and sauce. Heat through.
