    Mused after reading that in 2023, all but seven of the 100 most-watched television shows in the U.S. were NFL games. Wow! I guess we know who the 800-pound gorilla is on TV. With betting now allowed, viewership will only go up. Also, the NFL only continues to expand outside the country.

    FABULOUS FERMENTED FOODS

    Fermentation occurs when microorganisms (bacteria, yeast, or mold) feed on starch, sugar, or other food components. This was originally done to preserve food. Examples are grains fermented to make beer and bread, while wine is made from fermenting grape juice. Many cheeses, miso soup, some pickles, kombucha, tempeh (an Indonesian dish made by deep-frying fermented soybeans), and sourdough bread are all fermented.

    Some of the health benefits suggest an association between fermented dairy products and weight maintenance. Specifically studied, yogurt is linked to a lower risk of type 2 diabetes, cardiovascular disease, and overall mortality. It is unclear whether this occurs from the organisms themselves or the alterations of ingested foods. But fermented foods do provide a more diverse gut microbiome and has been shown to decrease inflammatory markers.

    (Did You Know? I usually have yogurt or cottage cheese for breakfast and a pickle with lunch. For kimchi and sauerkraut, Cleveland Kitchen makes very good products. They can be found at Kroger and Walmart.)

    Specific ways fermentation products help us:

    1. Adding to our gut microbiota. Some bacteria used in fermentation are called probiotics. These are “natural” probiotics.
    2. Fermentation helps microorganisms break down food constituents. Bacteria break down lactose, which helps those with lactose intolerance digest yogurt and cheese more easily.
    3. Deactivating undesirable compounds such as phytic acid. This binds to iron and calcium, decreasing their absorption. Fermentation reduces phytic acid.
    4. Sauerkraut contains compounds that protect the lining of the gut and could explain the anti-inflammatory effect.

    Overall, fermented foods are a delicious way to add nutritional variety to our dietary pattern, potentially decrease inflammation, and add to our gut microbiome, which we have much to learn about in relation to our immune system.

    Stir-Frying

    No spoon-fed recipe this week. Stir-fry basics, and you develop the recipe that suits you and your family.

    Basic Sauce: Mix 2/3 cup chicken broth, 2 Tbsp soy sauce, 1 Tbsp rice wine vinegar, 1 Tbsp honey or brown sugar, 1 tsp chili sauce (like sriracha or hot sauce of choice), 1 Tbsp cornstarch for thickening.

    Put together vegetables. Fresh, frozen (my fav since they are convenient and frozen at peak of freshness), leftover, or a combination. Start with harder vegetables like broccoli, green beans, and onions. Then add bell peppers, zucchini, mushrooms, garlic, greens, and the like. Sauté for a few minutes.

    Add a protein of choice. Again, leftovers of any kind work well, but meats need to be pre-cooked. Beans and tofu, even if not the primary protein, are beneficial. Combine with vegetables.

    Add the sauce and mix all. Warm, then top with green onions, cilantro (or other herbs), nuts, sesame seeds, or red pepper flakes.
