    The Therapeutic Value of Reading

    This week I just finished a Dean Koontz book and read an article on reading since we are all looking for a way to relax during this trying time. Below are some tips to enjoy reading.

    1. The point is not only to relax while reading but to put the cell phone and computer away and turn off the television.
    2. Make it a habit by finding a comfortable place to read, make something enjoyable to drink and try to read at the same time each day. (For me it’s while drinking my coffee in the AM and to help falling asleep at night.)
    3. Read the way you did as a kid, sprawled on your bed or under the covers. Even outside while the world is spinning.

    1. Try listening to an audiobook or podcast. Let the narrator do some of the work.
    2. Put down the book if you are not getting into it. Life is stressful and there are plenty of books that are relaxing.
    3. Start a new one as soon as you finish the last.

    A warm and tasty one pot wonder by Ina Garten: Pork Posole Soup/Stew.

    Brown 1½ lbs. of lean, boneless pork in a large pot with olive oil. After about 5-8 minutes, remove pork and add 2 cups of chopped onions with more olive oil. After 5 minutes add a diced, deseeded poblano pepper and a diced orange or yellow bell pepper. Cook for 5 more minutes. Add 1 Tbls. garlic, 1 tsp. chili powder, and ½ tsp. oregano. Cook one minute then return pork to the pot. Add six cups chicken stock and 12 oz. jar of salsa verde and bring to a simmer. Add one can of hominy, one can of black beans (rinsed) and 3 cups yellow corn chips (thickens the liquids). Add a Tbls. of salt and half that of pepper. Simmer partially covered for 30 minutes. Season further as needed. Garnish in bowls with a squeeze of lime, avocado, sour cream or cheese.
