    BEANS ARE THE LATEST TREND FOR PROTEIN AND FIBER

    High in protein and fiber, low in fat, beans help lower blood pressure and cholesterol. They improve our gut health and may lower our risk of cardiovascular disease, obesity and colon cancer. Beans are also high in iron, potassium, and folate. They are a type of legume that includes black beans, kidney beans, garbanzo beans (chickpeas), lentils, Adzuki beans and pinto beans.

    Beans help balance the gut microbiome which reduces inflammation in the body and potentially cancer risk. Beans contain starches that helpful bacteria like to eat. A recent study of subjects that ate beans daily for eight weeks had a greater diversity in their gut microbiomes, along with increased good bacteria and a decrease in bad bacteria.

    Beans, like high fiber food, keep us fuller longer and help with weight management. The protein and fiber in beans also reduce blood sugar spikes, which helps our bodies use insulin more effectively. It is now recommended that adults eat about 1.5 cups of beans, peas, or lentils each week.

    How to eat more beans? Add beans to things you already eat like salads, soups, eggs and meat sauces you put on pasta. Snacks can include roasted chickpeas and edamame.     While it is humorously called the “musical fruit”, it can cause gas and bloating. The key is to start slowly, like a quarter of a cup, and drink plenty of water. Work you way up and then maintain a certain level.

    Wine of the Week: Primitivo

    Today’s wine is Primitivo. Primitivo is mostly produced in Puglia, or southern Italy. It is a red wine and is made from the grape Zinfandel. It is full-bodied with tastes of blackberry and black cherry, and some spiciness of black pepper. It goes well with grilled meats, BBQ, and pasta with red sauce. It is a good substitute for Cabernet since it is usually less expensive. Look for it at Italian restaurants or surprise your friends by taking a wine they’ve probably never had over for dinner, especially grilling.

    LA DOLCE VITA, JOIE DE VIVRE:

    Black Bean Salsa

    I’m sure many of you have picnics or gatherings occurring before summer is over. This is easy and flavorful. Just add chips for dipping or use it as a side, it’s that good. (A credit to my late mother-in-law, who gave this to me.)

    Combine:
    2-15 oz. cans of black beans drained and rinsed
    1-17 oz. can of corn, drained
    2 large tomatoes, seeded and chopped
    1 large avocado, chopped
    1 purple onion, chopped
    ¼ cup fresh cilantro, chopped
    4 Tbls. fresh lime juice
    2 Tbls. olive oil
    1 Tbls. red wine vinegar
    1 tsp. salt
    ½ tsp. pepper

    Cover and chill. Garnish with avocado slices and cilantro.
