  • Positive Life Affirmations

     

     While we are all doing our part to mitigate the effects of the Coronavirus, McKenna’s Musing will focus on Positive Life Affirmations. Yesterday while listening to services in my kitchen, the pastor spoke of the importance of leaders to serve others. I feel I can help some of you combat the fear of life right now by sending you positive things. I hope you respond with some that I can share with others.     Some activities I did over the weekend are things for you to consider:

     

    Ghost and I took walks.

    I helped clean out a garden (bet you didn’t know I was part farmer).

    Spoke with my elderly parents.

    Took naps. Exercised.

    Watched some of the Xmas movies on the Hallmark Channel (watched Uncut Gems too but I don’t recommend it-too dark).

    Cooked and cooked. Recipe below.

    Killer Spaghetti Carbonara in 4 simple steps:

     

    1. Boil lightly salted large pot of water and cook 1 lb. of spaghetti according to package.
    2. In a medium bowl, whisk together 3 large eggs and 3 egg yolks with ½ cup each of Parmesan and Romano grated cheeses. Add salt and lots of pepper.
    3. Heat oil in large skillet over medium and sauté 5 ounces of pancetta or bacon in ¼ inch cubes. About 5 minutes until crisp.
    4. Reduce heat and add pasta to meat. Off heat toss in egg mixture. Add some pasta water if needed to make creamy. Serve with more Romano and pepper.
