    Ohio is not seeing the spikes of reopening

    As Ohio has gradually lifted its stay-at-home order over the past 6 weeks, there has been a plateau in the number of new cases and a decline in hospitalizations. The 7-day rolling average number of newly reported cases has dropped from 476 to 391. The number of weekly cases is the lowest since the second week of April. The number of hospitalizations has dropped from 1,067 to 513. The percentage of positive tests has dropped from 10.7% to 3.2%.

     

    Why? Dr. Mark Cameron, an infectious disease specialist from Case Western Reserve University College of Medicine has three theories.

     

    One is that increased testing is catching cases earlier before spreading or a severity that would lead to hospitalizations.

     

    Second is that not everything is open. The progressive reopening has helped limit the spread. Large gatherings such as concert halls and sporting events are still closed.

     

    Lastly, many people are still less mobile. Compared to last year there are 40% less workers at their workplace. Traffic is still 22% below normal. Restaurants, although open are 58% down from the same time last year.

    Here are two kitchen gadgets. The first is a brick wrapped in aluminum foil to flatten meats so the cooked evenly. Ina Garten showed this on the Cooking Channel. The second is a sous vide machine. It works by cooking things, mostly meats and fish, slowly at a low temperature in a water bath. I used it before grilling steaks on Father’s Day. It tenderizes whatever it cooks.
