    Legume Tidbits

     

    Legumes are beans, peas and lentils. This specifically includes green peas, green beans, and peanuts.

     

    The latest U.S. dietary guidelines recommend three cups of legumes per week.

     

    Legumes contribute to both the protein and vegetable food groups.

     

    Soybeans have ALL the essential amino acids in the amounts our bodies need. This means it can replace animal proteins.

     

    Legumes are high in dietary fiber and rich in micronutrients such as B-vitamins, potassium, zinc and vitamins E and A.

     

    A half cup of legumes has 7 grams of fiber. It has both soluble (helps with decreasing blood cholesterol and controlling blood sugar) and insoluble fiber (helps digestion and regularity).

     

    One concern is that it may bind to some compounds such as calcium limiting absorption. Soaking and cooking reduces this.

     

    Okay, and the big one, discarding soaking liquid and slowly increasing bean intake help to minimize gas production.

     

    Food to try: hummus, salsa with black beans, bean and egg breakfast wraps, Italian pasta fagioli, bean-based burgers, Indian dal, French cassoulet (one of my favs), bean chili, Mexican refried beans, three bean salad, and of course, who could forget the dogs in the Bushes Baked Bean commercials?

     

     

    LA DOLCE VITA, JOIE DE VIVRE:

     

    Chipotle Guacamole: (an article from someone who took a course from one of the Chipotle chefs)

     

    3 avocados, 1.5 limes, 1/3 red onion, ½ jalapeno deseeded, 1 bunch cilantro

    Use a whisk to break avocado halves into chunks then mix in circular motion. This gives creamy and chunky texture.

    Finely dice onion & jalapenos. Bend cilantro stalk in half & cut across. Add juice from limes to these three aromatics.

    Salt avocado and fold aromatics in.
