    We eat because food is delicious.  This statement is by Mark Schatzker who explores a theory about why Americans are becoming fatter.  Animals use taste and smell to identify and ingest nutrients crucial to life.  In 1939, a group of toddlers were offered 34 nutritionally diverse foods.  What each child ate and how much was up to them.

    The results were that the children ate the foods that nourished them the best and not sweets.  They ingested more protein during growth spurts and more carbs during peak activities.  Doctors were impressed with their health. 

    (Did You Know?  A 2006 paper in the journal Science showed that the 20 most important flavor compounds in tomatoes are all synthesized from important nutrients.) 

    Another study from 2006 found that Danish shoppers who purchased wine also, in general, bought healthier food.  The good health of wine drinkers may not be from the wine but rather those who like wine also like the taste of healthier food.  The Science article also found that “foodies” liked the flavor of the nutrients in tomatoes and “non-foodies” were more turned on by sugar.

    Mr. Schatzker’s lesson is to let flavor decide what we eat, we may all be healthier because of it.
