Mused after watching www.crossroads.net this past weekend online. The church services were horses being trained while the cowboy doing it gave a sermon. The parallels are freeing a horse to achieve its potential and how God wants us to reach our potential by faith and believing. It’s an incredible hour watching this cowboy connect with a horse that was essentially wild.
WINE AND YOUR HEALTH
The information below comes from a recent edition of Wine Spectator magazine. Obviously, there will be some bias but I think they do a good job with many warnings. “Women and wine” is a big topic also which I will cover on a later email.
Everyone knows the dangers of heavy or binge drinking. It may result in accidents and violence or the increased incidence of certain cancers, diabetes, and cardiovascular disease. My father was an alcoholic for years before giving it up completely. But light to moderate (definitions below) drinking when combined with a healthy diet and regular exercise can lead to lower rates of cardiovascular disease, diabetes, Alzheimer’s, dementia and respiratory illnesses.
The potential benefits seem to come from polyphenols which are chemical compounds found not only in grapes, but also tea, olive oil, chocolate, nuts and many fruits and vegetables. Red wine has more polyphenols since they are located in the skin of grapes and of course, wine color comes from the skins and the amount of time during fermentation. Ethanol in alcohol also stimulates acetylcholine, a major neurotransmitter, which may boost cognition. It could also be that drinking with family and friends activates the brain in a similar fashion.
(Did You Know? Moderate drinking, in many studies, is defined as one drink per day for women and two for men (metabolism is different and I’ll discuss in a future email). One “drink” is defined as 14 grams of alcohol or 12 ounces of 5% alcohol beer, 5 ounces of 12% alcohol wine or 1.5 ounces of 80-proof spirits.)
A 5-ounce glass of wine has between 120-140 calories although it correlates with the level of alcohol in the wine or any other drink for that matter. One can of beer has about 175 calories and 14 carbohydrates (light beers obviously less), a can of Coke 140 calories and 39 carbs, a can of hard seltzer 100 calories and 0-3 carbs, a gin and tonic 189 calories and 16 carbs (stick with diet tonic).
Earlier this year, a French nun known as Sister Andre, died at the age 118. She had credited her longevity to her work and a daily glass of wine and a piece of chocolate. A glass of wine before bed may help you get drowsy but studies show that alcohol disrupts your sleep pattern and wake up more frequently during the night. It’s also a diuretic.

Easy Romesco Sauce, A Catalonian Dish
In a blender or food processor, combine one 16-ounce jar of roasted red peppers, drained, ½ cup of unsalted almonds, ¼ cup oil-packed sun-dried tomatoes, rinsed and drained, 2 cloves of garlic, peeled and quartered, 2 TBLS red wine vinegar, 1 tsp paprika, ½ tsp salt (I used 1), and ¼ tsp cayenne pepper. Blend on low and slowly increase. Once mostly blended, drizzle ½ cup extra-virgin olive oil while running the blender until it’s the consistency you want it.
It’s great on any white fish, as a dip for crackers or vegetables, and I used it on my turkey sandwiches.

Prices going up…
It’s been many years since we last increased our prices particularly with micropeels or the lunchtime facials that have such a loyal following. I’m sure everyone can appreciate how costs of labor, materials and manufacturing have gone up. Beginning April 1st, the costs of skin care products will go up commiserative with what the companies have increased to us. We will however have deluxe samples to go with many of the skin care products during the month of April. On May 1st, services are going up but there will be packages for each of them to save in costs. For example, micropeels will be $130 each but a package of 3 will be $360 and a package of 6 will be $660. May’s special will be 50% off for referrals to skin care for micropeels as well as for our patient who made the referral.
Dr. McKenna’s secret to his skin appearance is that he has been using our skin care products for many years. He said, “the skin care nurses tell me what to use and how to use it and I just put it on.”
