    (Did You Know? Surgeon=stress, small business owner=stress. Personally, I subscribe to the 3 F’s (family, faith, friends) as well as exercise, etc., to handle stress. But I’ve found that when life is the hardest, spending more time discussing the personal lives of my patients is what helps the most. We’re all in this thing called life, together.)

    LA DOLCE VITA, JOIE DE VIVRE:

    Let’s try to make healthier nachos, Mexican style.

    Preheat oven to 350 degrees. Take baked chips and spread on a foil lined cookie sheet. Cover with pre-roasted chicken breasts in bite size pieces. Rinse and add ½ can of black beans and ½ can of mild green chilis. Fire-roasted corn from the freezer section at Kroger can be sprinkled on top. Follow with Mexican cheese blend. Bake 15-20 minutes for warming ingredients and melting cheese. Top with salsa, Pico de Gallo, Greek yogurt, guacamole, mild banana pepper rings, and cotija cheese.

    (Bonus: what to do with leftover nachos. In a pot, I sauteed onions, celery, carrots, then added the dark meat from the roasted chicken, 32 ounces of chicken stock, and the leftover nachos. After 10-15 minutes of simmering, add ½ bag of noodles. Salt and pepper to flavor, and you have chicken noodle soup with a Mexican flavor.)
