    THREE WAYS TO ACTUALLY ENJOY WINTER

     

    This information is from Kari Leibowitz Ph.D. who went to Norway to study how the people there endured winter. She realized that they actually enjoyed it. There was no increase in wintertime depression. They have a “positive winter mindset”. Here’s some reasons.

     

    Anticipate the Season

    The beginning of winter is debatable but first key is to acknowledge it. Stock up on hot cocoa, move your wool socks to the top drawer, set up tealights and put on flannel sheets. Mark the transition with a celebration like a candlelight dinner or an evening out visiting the lights at the zoo. Make a list of winter activities you’re anticipating.

     

    Light the Way

    1.  For many, early winter has many activities and celebrations like Thanksgiving, Christmas and New Year’s. But beyond that winter drolls on. Kari suggests spreading out special activities and celebrations like gift giving, family movie nights, shopping, and baking. Lights imbue the holidays so continuing with candles throughout winter helps. (We still have a couple of Christmas trees up with just lights.) Norwegians use pounds of candles each year.

    Opt Outside

    No, I wouldn’t follow Kari’s example of swimming in a frozen Finnish river and don’t believe that the cold weather gives us colds but there are plenty of things to do outside. The Norwegians esteem the philosophy of friluftsliv or open-air life emphasizing time in nature no matter what the season. Scandinavians say there’s no such thing as bad weather only bad clothing. Dress warmly and get outside because there’s nothing quite as enticing as returning to the smell of warm cookies, candlelight and a roaring fire.

    LA DOLCE VITA, JOIE DE VIVRE:

     

    Taco Soup

    In a large pot, brown two pounds of ground chuck and two onions chopped. Drain fat.

    Add:

    3 14.5 oz. cans chopped tomatoes w/ liquid

    1 14.5 oz. can yellow corn w/liquid

    1 14.5 oz. can hominy w/liquid

    1 14.5 oz. can pinto beans w/ jalapenos w/liquid

    1 small can of green chilis w/juice

    1 package of taco seasoning

    1 package Hidden Valley dry mix

    2 beef bouillon cubes soaked in 2 cups of water

    (I vary the types of tomatoes and beans added. I also add okra.)

     

    Simmer for at least one hour, more is better

     

    Serve with sour cream, cheddar cheese, tortilla chips and/or guacamole
