    Mused after making dinner for friends I termed “Birds of a Feather”. I prepared a smoked turkey pre-appetizer, duck crostini appetizer, roast goose with orange and five spice, and lastly, roast capon with a cream, mushroom and cognac sauce. The capon was enjoyed the most and I will be sure to do it again. (A capon is a castrated male chicken that is larger than a regular chicken with a more intense flavor.)

    FOOD TRENDS AND THEIR HEALTH BENEFITS, EXCEPT ONE

    A Tour of Asia
    Korean kimchee, Thai chili-lime, Indian masala, Chinese Sichuan, and Middle Eastern za’atar are some of the Asian flavors showing up in increasing frequency. If used by themselves in something like stir-fry they are healthy. When used as a flavoring in something unhealthy like potato chips they are not helpful. Trying dishes with different flavors from different cultures increases variety of dietary intake.

    Turning Up the Heat
    Spicy food is gaining. Spices and peppers are used by themselves or added to oils and honey. It’s easier than ever to find various chili peppers (see recipe below) as well as Calabrian and hatch chilis. They get their heat called capsaicin which is concentrated in the pepper seeds. Capsaicin is helpful as a topical pain reliever. Orally it can irritate the GI tract causing acid reflux or diarrhea.

    (Did You Know? Removing the seeds makes the peppers less spicy while retaining their flavor.)

    Briny Goodness
    Acidic, briny, and fermented foods are trending. Korean spicy fermented cabbage is called kimchi (spelling can be either way). Other choices include olives, pickles (my fav), sauerkraut and pickled vegetables. Along with yogurts, these nourish beneficial microbes in your gut enhancing the diversity of gut microbes and decreasing inflammatory markers, according to studies.

    Protein Bars
    Health benefit, not so much although there are some. Most Americans meet or exceed their recommended protein intakes. The amount of protein in them is better received through a serving of turkey, salmon or a cup of legumes. Problems? First is that they are often ultraprocessed. Second, many of these bars are high in sugars. Better alternative snacks include a hard-boiled egg, chickpeas with spices, cottage cheese, or yogurt with dried fruit or nuts.

    LA DOLCE VITA, JOIE DE VIVRE:

    Turkey Chili with Hominy and Two Peppers
    In a medium saucepan heat 2 TBLS. of olive oil. Add one diced onion and two minced garlic cloves. Cook until softened, about 4-5 minutes. Add 1 pound ground turkey and 1 TBLS. ancho chili powder, 2 tsp. cumin, ½ tsp. chipotle powder and season with salt. Cook until turkey is lightly browned, about 5 minutes. Stir in 2 TBLS. flour and 1 TBLS. tomato paste. Add three cups of beef stock and one 15 oz. can of hominy. Simmer until thickened, about 15-20 minutes. Ladle into bowls and serve with cheese, cilantro, sour cream and tortilla chips.
