    Eggs are inexpensive; protein packed, and relatively low in cholesterol.  The cholesterol in foods like eggs is different from the LDL cholesterol in the blood stream that contributes to heart disease.  The Kuopio Ischemic Heart Disease Risk Factor Study found neither egg consumption nor dietary cholesterol intake was significantly associated with risk of coronary artery disease.

     

    There is 186 mg of cholesterol in the average egg. It is contained in the yolk.  The American Heart Association recommends 300 mg of cholesterol or less each day.  For those with normal cholesterol four eggs or less per week are acceptable.  Anyone with high cholesterol should try to consume two eggs or less each week.

     

    There are 6 grams of protein and 70 calories in an egg.  Egg whites have only 15 calories.  Also in eggs are Vitamin A, minerals, iron, zinc, and B12.

     

    (Did You Know?  The color of the egg is a reflection of the bred of the chicken.  Jumbo eggs are 2.5 ounces, large 2 and small 1.5.  A typical hen lays 200-300 eggs a year.)

     

    Egg’s expiration is no more than 30 days from packaging, not laying.  They should be stored pointy end down inside the refrigerator not in the door where temperature fluctuates.  Fresher eggs have cloudier whites and rounder yolks.  Hard boiled eggs spoil faster than fresh eggs.

     

    Cooking does not change the nutrients of eggs.  Raw eggs consumed ala “Rocky” style may carry salmonella bacteria.  Egg Beaters are egg whites unless otherwise marked.  Kroger is expanding their “cage-free” eggs this fall.
