Mayonnaise is a combination of egg yolk, oil, lemon juice or vinegar, and seasonings. It is generally believed to have originated in France in the mid 1700’s. There are regional differences in making it. For example, in Russia sunflower oil is used.
Legend has it Miracle Whip was invented in 1933 by Kraft and debuted at the Chicago’s World’s Fair with the slogan: “Salad Miracles with Miracle Whip Salad Dressing”. During the Great Depression it was considered similar to mayonnaise but sold at a lower price. Miracle Whip has the same basic ingredients as mayo but in different proportions. There is less egg and oil so it is tangier.
(Did You Know? The name Miracle Whip is trademarked so other manufacturers must use the term “Salad Dressing” when making a similar product. )
There is a caloric and fat content difference between the two. Miracle whip has 35 calories and 3.5 gms. of fat per tablespoon. Mayonnaise has 90 calories and 10 gms. of fat. Hellman’s Light, a low fat mayo, has 50 calories and 5 gms. of fat. Miracle Whip has some processed ingredients including modified food starch, artificial color, and high fructose corn syrup. Today the costs for Miracle Whip and mayonnaise are about the same.
