    Mused after watching two family-oriented shows on Netflix. Nonnas, a movie starring Vince Vaughn, is based on a true story about starting an Italian restaurant with “nonnas” (grandmothers) as the chefs. The Four Seasons is a short series from Alan Alda (Hawkeye in MASH), who starred and wrote the original movie years ago. It tells a story of friends vacationing with each other and their interactions with life over a year. You’ll recognize Vivaldi’s “The Four Season” music.

     

     

    Your Liver; What it Does, Diseases, and How to Keep it Strong

     

    Think of your liver as a refinery. Everything you consume, your liver filters, processes, stores and/or turns into something new. It makes cholesterol. It regulates glucose. And whatever we don’t need, it releases from the body.

     

    Diseases of the liver start in stages, from inflammation to fibrosis/scarring to cirrhosis to shut down and the need for a liver transplant.

     

    Viral hepatitis has five main types from A through E. A is typically mild. B and C can lead to cirrhosis. Vaccines are helpful for hepatitis A and B. Also, there are good drugs to help with hepatitis B and C.

     

    Your liver dies a little bit every time it processes alcohol. Drinking too much can lead to the liver becoming fatty and scarred.

     

    MASLD is metabolic, dysfunction-associated liver disease that is caused by nonalcoholic things. The biggest culprits are obesity and type 2 diabetes. It affects about 30 percent of the world’s population and growing in the U.S.

     

    (Did You Know? Short of cirrhosis, problems with the liver can be reversed since it regenerates itself. Even cirrhosis can be stabilized.)

     

    Unless far advanced, where symptoms are yellowing eyes and skin (jaundice), swelling of the abdomen or confusion, problems with the liver need a doctor to diagnose them. Blood tests are the primary method of checking the enzymes, platelets, albumin, proteins and bilirubin which the liver produces.

     

    Keeping the liver strong includes some things that are associated with a healthy lifestyle. A healthy diet of lean protein, lots of produce, and little sugar are easy on the liver. Exercise of 150 minutes a week at moderate intensity can help reduce liver inflammation and rid the organ of fat. Coffee, even decaf, can help protect against fibrosis. Studies show positive effects starting at two to three cups per day. Lastly, weight loss can help reduce the fat in your liver.

     

    Other helpful habits include limiting sugar and alcohol. Some meds can hurt the liver, especially acetaminophen (Tylenol), so check with your doctor about your meds. Also, some unregulated herbal supplements can harm your liver.

    LA DOLCE VITA, JOIE DE VIVRE:

     

     

    I recently had deviled eggs and decided to share since they are easy to make and can be used for snacking, breakfast or appetizers. My favorite is with smoked salmon (see below.) Eggs are 6 grams of protein each!

     

    Standard recipe:

    Halve 6 hard boiled eggs wiping blade after each cut.

    Scoop yolks into a large bowl. Add 2 Tbls. mayo, plain Greek yogurt or sour cream.

    Using the back of a fork, mash it all up.

    Drizzle 2 Tbls. of canola or olive oil stirring until it’s fluffy and creamy.

    Season with salt.

    Using a small spoon, fill whites with the yolk mixture. Two per halves.

     

    The five golden rules (tips?) for making perfect deviled eggs are: 1) Steam your eggs instead of boiling them for faster and more efficient cooking. 2) Whip the yolks with a hand mixer to achieve a light and smooth filling. 3) Balance the richness with spice and acidity, adding ingredients like mustard, pickle juice, or hot sauce. 4) Use a piping bag with a ridged tip for a professional, decorative finish. 5) Go over-the-top with toppings to enhance the flavor and presentation.

     

    Other ways to enhance:

    Smoked salmon: 2 oz. chopped smoked salmon, 1 Tbls. capers, 1 Tbsp. lemon juice, 1 minced shallot, ¼ tsp. cayenne and top with fresh dill.

    Bacon Horseradish: 1 1/2 Tbsp. horseradish, 2 crumbled cooked bacon slices, ¼ tsp. black pepper and top with chives.

    Green Eggs and Ham: ½ diced avocado, 2 Tbsp. chopped pickled jalapeno, 2 Tbsp. minced onion, ½ tsp. garlic powder and top with ham or prosciutto.
