Wine of the Week: Vermentino
I thought sharing some of my wine experience (collector for over 30 years), especially during the summer, would be informative and fun. Many “summer” wines are light, easy to drink and inexpensive. Today’s wine is Vermentino. It’s an Italian grape made into wine similar to pinot grigio or sauvignon blanc. It’s usually dry (the opposite of sweet) with tastes of citrus fruits like lemon, grapefruit, or even orange. Other characteristics include other fruits, salty, mineral-dryness, and even almond. Serve chilled with fresh foods such as seafood, salads, and other light meals. Cheers!
The Humble Hamburger and How to Make it Healthy (Sort of)
Yes, we all know that red meat, especially processed, is associated with cardiovascular disease and a higher risk of type 2 diabetes. Besides replacing it with fish/seafood, dairy, nuts, soy, beans, etc., there are several ways to still enjoy a “burger”.
As mentioned above, substituting simply avoids red meat. Plant-based alternatives are ubiquitous these days, although many have unhealthy components to provide flavor. Veggie burgers come in different forms with combinations of beans, grains, and other vegetables. Marinated portobello mushroom caps fit nicely on hamburger buns and have a meaty texture. Lastly, firm tofu can be marinated and grilled.
(Did You Know? Make sure your ground beef is cooked to 160 degrees. Ground meat is a leading cause of E. coli infections.)
Stretching the ground beef mixture with chopped mushrooms gives a savory richness of umami. Mixing in some cooked lentils or whole grains (think goetta) is another way of eating less red meat.
Accessorizing your burger helps make even a beef patty seem healthy. Toppings of the classics, lettuce, tomato, and onion, or special sautéed mushrooms, roasted red peppers, or sundried tomatoes, make a burger healthier. Skipping the bacon and limiting the cheese to one slice helps too. Sides like salad, beans (see recipe below), and fresh vegetables are much better than potato chips and French fries.
Practicing moderation in how often you enjoy a burger can relieve guilt as well as be healthier. Using leaner beef rather than the traditional 80 percent meat with 20 percent fat again helps. Also consider other options that are leaner, such as bison, venison, turkey, chicken and salmon.

5-Bean Baked Beans with Ground Beef
Brown 1 pound of ground beef. Crisp ½ pound bacon, saving 1 Tbls. drippings. Sauté 2 chopped onions in this. Add onions, crumbled bacon, and 1-15 oz. can drained kidney beans, 1-15 oz. can drained lima beans, 1-15 oz. can garbanzo beans, 1-16 can Bush’s Beans, 1-15 oz. can chili or pinto beans, ground beef that has been drained, ½ cup vinegar, ½ cup chili sauce, 1 cup brown sugar, and 2 mince cloves of garlic into a large casserole dish. Bake at 325 degrees for 1 ½ hours.
(I’m not big on lima beans and there are several other types of beans you can substitute for any of the above.)
