    Mused after visiting Paso Robles to do wine tasting and visiting the beautiful coastline. Located in mid-California, the quiet area has over 200 wineries. Restaurants and locals were great. The elephant seals were there and we also visited the Hearst Castle with its magnificent pool. Highly recommend it if you enjoy wine tasting.

    CONTAMINATED AND CLEAN FRUITS AND VEGETABLES

    WASH YOUR FRUITS AND VEGETABLES!!! The take home message of this Musing. Annually the Environmental Working Group (EWG) releases a list of the most dirty and clean fruits and vegetables. The FDA and USDA analyzed 47,510 samples of 46 fruits and vegetables and found them ALL positive for trace pesticides. A senior toxicologist for EWG states that “what ends up on one list versus the other reflects how the produce is grown. Avocados aren’t pesticide intensive, while strawberries grow close to the ground and have a lot of pests.”

    (Did You Know? 75% of all conventional fresh produce sampled had residues of potentially harmful pesticides.)

    LA DOLCE VITA, JOIE DE VIVRE:

    Salmon (or any white fish) with Gin, Tomatoes, Shallots, Lemon and Capers

    (the recipe calls for oven temp at 225, I found it took A LOT longer to cook than listed so I recommend 275 degrees)

    Preheat oven to 275 degrees. Use 4 8 oz. salmon fillets (or halve recipe for 2 fillets) and sprinkle with ½ tsp. salt and ¼ tsp. pepper and transfer to a baking sheet (I put parchment paper first to make clean up easier.) Toss together 2 pints of cherry tomatoes halved, ½ cup olive oil, 2 shallots thinly sliced, ¼ cup drained capers, ¼ cup gin, thin half-moon slices from two lemons BUT zest them first and add and 1/8 tsp. red pepper flakes. Scatter tomato mixture around and on top of salmon. Cook until desired doneness about 30 minutes. Garnish with fresh herbs.
