How We Age at a Cellular Level
Scientists call it “hallmarks of aging” – a set of biological features and mechanisms linked to our aging process. Some of these (a complete list is to the right) include: shortening of telomeres (DNA segments at the end of chromosomes); cell senescence or when cells stop dividing; and breakdowns in how cells regulate nutrients.
(Did You Know? Three more “hallmarks” by the original group of researchers include: chronic inflammation; imbalance in the microbiome, the community of microorganisms that live inside people; and defects in autophagy, a cell’s ability to recycle damaged parts of itself.)
Now stay with me. Changes in the epigenome, which consists of proteins that can attach to DNA and regulate whether genes are turned on or off may lead to aging. Some think that errors in the epigenome drive aging and by reprogramming cells could lengthen life. Scientists have done this this extending the lifespan in mice and reversing blindness in mice and monkeys. Google is working on this also.
Senescence of cells can occur when sensors that cells use for fuel sources become less effective. This can cause metabolic disorders and cancer. Caloric restricting diets increase lifespans. The theory is that they stress cells, increasing resilience and reducing cell senescence. Rapamycin, used in cancer suppression and aiding in transplanted kidney rejection, mimics the stress by blocking a nutrient sensor. It is being tried on dogs to increase longevity.
Like the epigenome research, those who studied telomeres won a Nobel prize. Shortening of telomeres occurs with age and is associated with disease. However, those with unusually long telomeres have an increase in the risk of developing tumors and blood disorders. This work is being studied in cancer patients.

Chicken Cacciatore (Chicken Hunter’s Style)
Season 6 skinless chicken thighs or 4 skinless chicken breasts with salt and pepper. Add 2 Tbls. of oil to skillet and brown the chicken on both sides, about 3-4 minutes each side. Remove. Add another Tbls. of oil and sauté one diced onion about 3-4 minutes then add 6 cloves of minced garlic and cook about a minute. Then add 1 yellow and 1 red pepper that have been diced, a carrot sliced, 10 oz of sliced mushrooms and the following herbs: 2 Tbls. each of fresh chopped parsley and basil, 1 tsp. dried oregano. Cook until vegetables start to soften, about 5 minutes. Pour in 2/3 of a cup of red wine, scraping bottom of pan. Cook until wine reduced, about 2 minutes. Add 1 28-oz. can of crushed tomatoes, 2 Tbls. tomato paste, and 7 oz. of halved Roma tomatoes. Add ½ tsp. of red pepper flakes if desires. Season with salt and pepper and return chicken to skillet. Reduce heat to low and simmer for 40 minutes or meat is flaky. Add ½ cup of olives if desired.
Serve with risotto, noodles or rice; white, brown or cauliflower. Chianti or pinot noir go well with this dish.
