Mused after… watching Chef Bobby Flay make creamy scrambled eggs. Start with a nonstick pan and LOW heat. Add half a stick of butter. Whisk eggs in a bowl and add to melted butter. The key is to cook the eggs slowly taking about 8-10 minutes. Add herbs if you wish. Wait until the end to add salt and pepper. Take eggs out of pan just before they are cooked the way you like them. They will continue to cook on your plate.
WORKING OUT? TRY GOING SLOWER
You should perform most of your cardiovascular exercise at a level that lets you carry on a slightly strained conversation. This type of training helps us produce energy more efficiently by stimulating our cell’s powerhouses, the mitochondria. Over time, this translates to better health and athletic performance.
This mellow intensity is called Zone 2 and is used by elite athletes who spend much of their time training at this level. In the past this has been called the “fat-burning” mode. The real benefit is that mitochondria convert fats and carbohydrates to energy at this performance level.
(Did You Know? Zone 1: A brisk walk where you can effortlessly carry on a conversation. Zone 2: A relaxed jog or easy bike ride where you can still talk but every few words. Zone 3: A run where you can’t maintain more than three sentences, Zone 4: An effort where you can only respond yes or no, Zone 5: A sprint where you can’t speak.)
Zone 2 is just one part of the fitness puzzle. It builds our endurance base, but our other workouts should include strength training and high-intensity training (Zone 4). To that I would add flexibility, stretching and balancing; yoga for example.
Use Zone 2 to catch up with a friend and exercise together (running, biking, etc.). But remember a Zone 2 for you may not be the same intensity as a Zone 2 for someone else.

Easy Steps to Poached Eggs by Bobby Flay
For some reason, I have always been intimidated by poaching eggs. But after watching Bobby Flay go through it in detail, it doesn’t seem so hard. Here’s how:
1. Warm water to just before boiling.
2. Add white distilled vinegar. He used about a quarter cup in the pot.
3. Crack eggs in a ramekin, not directly into the pot. It avoids shells getting in the pot.
4. Swirl the water or don’t, the vinegar causes the eggs to coagulate itself together more than swirling.
5. Only add 2-3 eggs per pot.
6. They are ready as soon as you can get them out without breaking.
7. Put the egg in a bowl with water and ice. It stops the egg from cooking and holds them until you are ready for them.
8. When ready for the eggs, put them back into the hot water for about 30 seconds to warm them.
9. After removing the egg from the warm water, place it on a towel to absorb the water, then plate it.
