Mused after watching much of the Olympics over the weekend. So many exciting events with tennis and golf coming down to the final shots, a 100-meter dash won by .005 seconds, and USA dominance in the pool events. So many other events that are fun to watch even for a few minutes. A UK Medical School student who has put her studies on hold the last few years to win gold in fencing. Amazing talent, but more amazing, the dedication they ALL have.
SELF-TANNING
Why a Musing on self-tanning? Many of you are still planning on vacations this summer where the sun is going to play a major role. Using self-tanners instead of the sun will give you that “golden” appearance. Also, this helps to limit sun damage to your skin if part of your goal is to come home “tanned”.
One of the most common questions I get is “how do I get rid of stretch marks?” Well, stretch marks are essentially scars beneath the superficial layer of skin and are permanent. Cellulite is a problem for many also. Concealing them with self-tanners can help.
Self-tanners cause a chemical reaction with the skin’s top layer making it appear “tan” for about a week. Their key ingredient, DHA, or dihydroxyacetone, reacts with the skin’s amino acids to cause a “golden” hue. More savvy methods of DHA delivery by encapsulating the compound in lotion or oil allows the skin to better absorb it. Some even come with SPA to help prevent UV damage.

To look more natural, self-tanners have become more sophisticated. Not only are there different types for different skin colors or end results but they also have additives to avoid the “orange” color. Some products add green and violet undertones to cancel this out.
Before applying the product, exfoliate in the shower which removes much of the skin’s dead cells to get a more even application. Next use a mitt, if possible, to avoid tanning the palm of your hand. Apply in smooth even fashion and use lotion if the tanning product is a serum. Finally, allow yourself a few tries to master a full-bodied bronze effect.
Some of the products recommended in the article include: Tan-Luxe, St. Tropez, Sisley Self-Tanning Gel, Prada Self-Tanning Mousse, and Vacation Self-Tanning Lotion with SPF 30. While some are expensive, only a few drops of product are used each time.

Spatchcock chicken with vegetables beneath
Roast Chicken with Potatoes, Shallots and Lemon:
An elegant dish that comes together in one baking dish. Arrange the potatoes, shallots, garlic and lemon under the bird and the drippings coat the vegetables providing extraordinary flavor.
Preheat oven to 425 degrees.
Place chicken, backbone side up, on a cutting board. Using kitchen shears, beneath skin, cut along each side of the backbone and discard it. Flip chicken breast side up, push down to flatten. Spatchcocking the chicken allows a more even roast. Sprinkle liberally with salt and pepper on both sides. If time allows, put on a wire rack with baking sheet beneath and put in refrig. For one to twelve hours. This helps to dry out the skin. Remove an hour before baking.
In a large baking dish or oven proof pan, toss together 11/2 lbs. of small baby new potatoes, 10 shallots halved with 2 Tbls. olive oil and salt and pepper. Add 2 unpeeled garlic heads halved crosswise and 2 lemons halved. Put cut side down in baking dish. Drizzle with ½ cup white wine and 4 fresh tarragon sprigs.
Place chicken, breast side up, over mixture. Drizzle with 2 Tbls. olive oil. Roast for about 55-60 minutes until potatoes browned and tender and chicken 165 degrees.
Remove and let rest for 10 minutes. Squeeze garlic cloves into the baking dish and lemon juice from lemons. Discard garlic skins and lemon peels.

Zucchini Side Dish
Quick and easy! How to use up all that zucchini you grew or someone gave you.
Cut one zucchini and one onion in small chunks. Sautee with olive oil. Add one can of fire roasted salsa style diced tomatoes from Kroger. Stir and serve. Told you it was easy!
