Mused after… learning the “hack” for cans of tomato paste. Did you ever use a tablespoon from a can then end up throwing out the rest? Alton Brown’s suggestion is to freeze the tomato paste can, remove it and open BOTH ends with an opener but leave the one end in place. Push it out like a “push-up” ice cream. A ½” is about a tablespoon. When done put in sealed plastic bag and refreeze for the next time.

THE TROUBLE WITH AMERICA’S ULTRA-PROCESSED DIET
The main problem with ultra-processed foods is the link to increases in the risks of obesity, Type 2 diabetes, cancer, cardiovascular disease and depression.
What are ultra-processed foods? In general, they are foods that include ingredients that you wouldn’t find in a home kitchen. The more the ingredients the more the chance that the food is modified or preserved in some way to become ultra-processed. Even “organic” or a “good source of grains” may be ultra-processed. Unprocessed or minimally processed foods are close to their natural state-fruits, vegetables, and plain meat. Researchers use a classification system published by scientists in Brazil.
(Did You Know? About 58% of the calories that children over the age of 1 and U.S. adults consume each day come from ultra-processed foods. For children it is even higher.)
While they may seem healthy, many breakfast cereals, soups and granola fall into the ultra-processed category. Unfortunately, highly palatable foods contain high levels of sugars, unhealthy fats, and low fiber content. They are processed differently in the gut from a more “natural’ diet. One study showed that given the same calories the ultra-processed group ended up gaining 2 pounds more in a week than the less-processed group
A rule of thumb is that if you don’t know what the ingredients are it is probably ultra-processed. Choose whole foods without sway to sayings like “heart healthy” and the fewer the ingredients the better.
LA DOLCE VITA, JOIE DE VIVRE
Turkey Noodle Soup
In a large pot, heat two Tbls. of olive oil. Add one bag of frozen mirepoix (a diced mixture of onion, carrots, and celery purchased in the frozen vegetable section at Kroger’s). Defrost and warm vegetables for 5-6 minutes. Add two quarts of chicken or turkey stock, 1 tsp. sage, a bay leaf, 1 tsp. thyme, 1 tsp. salt and ½ tsp. pepper and bring to a boil. Add half a bag of good quality egg noodles (8oz.). Simmer 5 minutes. In the meantime, shred about a pound of leftover turkey and add to soup. If you need more flavor, add a teaspoon of chicken bouillon. Cook 5-10 minutes more.
Turkey Cassoulet
Preheat oven to 400 degrees. In a large frypan, fry 3-5 strips of bacon chopped into 1-inch pieces. Remove and set on paper towel when cooked. Add ½ – 1 pound of sweet Italian sausage and cook in bacon fat. When cooked put aside and cut in ½ inch pieces. Add one chopped onion to the same pan. When softened add 3 minced cloves of garlic. After about 30 seconds, add one 28-ounce can of whole peeled tomatoes and cook until they breakdown into a sauce, about 5-7 minutes. Add one can of drained cannellini or Great Northern beans and cook for another 5 minutes. Salt as needed. Mix the bacon and sausage with leftover turkey that has been chopped. In a 9 x 11 casserole dish or oven-safe pot layer the tomato-white bean mixture with the meat mixture until all have been used (for me it was 3 layers). Mix ½ cup of breadcrumbs with ¼ cup of olive oil (I added some parmesan cheese too) and top the cassoulet. Bake in oven for 15 minutes until mixture is bubbly and breadcrumbs are brown. Serves 6.
