Wine Headaches
According to a 2013 study, more than a third of wine drinkers report occasional headaches from the wine, not overindulgence. It may come from a single glass and red or white wine. Sulfites have been studied and found not to be the cause. There are two categories that are being explored.
Phenolic flavonoids include molecules that give wine its color, flavor, and mouthfeel from the skin, seeds, and stems. Unfortunately, they also affect enzymes that trigger the release of serotonin which is linked to headaches.
Biogenic amines are produced during the making of wine or fermentation. This is linked to histamines and tyramine which again can cause headaches. These amines are also in aged cheeses, cured meats and dried fruits.

The causes of the headaches are probably multifactorial. It is not only the alchemy of the wine but hormonal changes, stress, sleep problems, foods ingested with the wine and even the weather can play a factor. Each individual needs to put together their own factors and types of wine that precipitates a headache and try to avoid them.

Chicken, Tomatoes, and Onions
While tomatoes maybe on their way out of season, this simple recipe is delicious and great for hot weather as summer seems to be lingering.
Whisk together 1 cup olive oil, half a cup of red wine vinegar, 1.5 tsp of oregano, .5 tsp salt and .25 tsp. of pepper. Add 12 oz. of heirloom tomatoes cut in wedges, 8 oz. cherry tomatoes halved, and 1 thinly sliced medium red onion. Marinate for 30-60 minutes. In the meantime, grill 8 (4 oz.) chicken cutlets seasoned with salt and pepper. Let rest after grilling and slice as desired. Transfer to serving platter and spoon tomato, onion mixture over top with marinating liquids.
