Vaccines Hold Up Well Against Delta Variant
The Delta variant is the most contagious version of the coronavirus and is accounting for 83% of analyzed infections currently. Two doses of the vaccine are needed to provide the necessary level of antibodies to deal with the presence of mutations.
A second dose also boosts the numbers of two other immune system weapons. The T-cells that hunt down infected cells and destroy them, and memory B-cells which circulate in the blood and turn out antibodies upon detecting a virus.
(Did You Know? In an unvaccinated individual, the immune response can take up to two weeks whereas it happens almost immediately in vaccinated persons.)
Like most vaccines, the Covid-19 shots trick the body into thinking it has been infected. This generates antibodies which in this case bind to the spike protein on the coronavirus which blocks it from infecting cells.
Published in the New England Journal of Medicine, a study of nearly 20,000 people found that after two doses of the Pfizer vaccine it was effective 88% against Delta compared with only 36% after one dose.

Easy Gazpacho by Ina Garten
Add 2–28 ounce cans of plum tomatoes (like San Marzano) into a food processor. Deseed and coarsely chop a cucumber, two red bell peppers, half a red onion, and 4 scallions. Pulse until consistency you want the soup to be. Transfer to a bowl and add ½ cup olive oil, ½ cup red wine vinegar and 2/3 a cup tomato juice (I used V-8). She adds two tablespoons of tomato paste and I also added a tablespoon of fish sauce for Unami flavor. Add celery salt and crushed red peppers to taste along with one tablespoon of salt and half a tablespoon of pepper. Refrigerate at least a couple of hours or make the day before. It just gets better. Top with sour cream as you serve it. Serves 6-8.
