Sauce for White Fish by Ina Garten
Combine 8 ounces of crème fraiche, 3 Tbls. Dijon mustard, 1 Tbls. whole-grain mustard, 2 Tbls. minced shallots, 2 tsp. drained capers, 1 tsp. salt and ½ tsp. pepper. Spoon sauce evenly over 4-8ounce fish fillets such as red snapper, halibut, tilapia, haddock or as I used, cod. Cook at 425 degrees for 10-15 minutes depending on the thickness. It should flake easily in the thickest part when done.
