Mused after receiving my November election absentee ballot. As crazy as politics is right now, both sides agree that voting is not only your patriotic duty, but an important say in how the country will be run the next four years. PANCREAS; A SHORT PRIMER ON WHAT IT DOES AND DAIABETES, PANCREATITIS, AND PANCREATIC CANCER
The pancreas makes hormones that regulate blood sugar to help prevent diabetes. Secondly, it helps digest food. When this goes wrong, you may lose weight or have bathroom issues.
The pancreas likes anti-inflammatory diets like the Mediterranean style. Physical activity helps by keeping weight down. The pancreas does not like smoking because of the inflammation and cellular DNA damage that affects it. Drinking is a toxin to the pancreas and injures it over time.
(Did You Know? It’s oftentimes difficult to diagnose problems with the pancreas. Some symptoms may include oily, light-colored stool, jaundice, abdominal pain from the center of your body, or an unexpected weight loss.)
Type 2 diabetes happens when your body doesn’t respond well to the insulin the pancreas produces. Eventually this wears out the pancreas. High blood sugar can cause heart attacks, strokes, kidney failure, blindness, peripheral vascular disease and ED.
Pancreatitis occurs when the digestive enzymes the pancreas makes cannot get into the small intestine and attacks the pancreas itself. This results in horrific abdominal pain. Most commonly this is from alcoholism or gallstones.
Pancreatic cancer is just scary. The average life expectancy is one to three years. Most of the time it is advanced before being diagnosed. Treatment is usually surgery and chemotherapy.

LA DOLCE VITA, JOIE DE VIVRE:
Just because Labor Day is over doesn’t mean grill season is. In fact, with the slightly cooler weather, grilling gets more comfortable. Can’t image football season without it. Here are two unique recipes to up your “game.”
Jackie Kennedy Onasis’s Marinade for chicken. (Although it can be used as a sauce for fish and lamb.)
5 ounces of plain yogurt, 1 tsp. cumin, 1 tsp. coriander, ½ tsp. cardamom, 1 clove of garlic minced, salt and pepper to taste. Mix ingredients together then marinade up to 3 lbs. of chicken with it for three hours before grilling. Again, I don’t see why it can’t be a stand-alone versatile sauce.
Grill a Better Burger:
Thinly slice one large onion. Then thinly slice one jalapeno, a few mushrooms, or a bell pepper. Place a cast iron skillet or griddle on the grill (or on your stove) at a medium-high temperature. Add oil. Divide the onions and whichever accompaniment into fourths and place in four areas of the pan. Season with salt and pepper. Create 4 balls of 80% ground beef. After a few minutes when the onions and other have partially cooked, add balls to the top of each. Take a piece of parchment paper to cover the balls. Using a metal spatula, “mash” the balls to thin the burgers. Take off parchment. Sprinkle the patties with salt and pepper. Cook undisturbed for 2-3 minutes. Flip and add cheese to grilled onion side. Cook patties until browned.
Burger Sauce: Mix together 3 Tbsp. of mayonnaise, 11/2 Tbsp. ketchup, 1 tsp. Worcestershire sauce ¼ tsp. garlic powder, ½ tsp. pepper, and ¼ tsp. salt.
