    Mused after making chili lime butter for corn on the cob. Mix together 3 tablespoons of room temperature unsalted butter, 1 teaspoon lime zest, 1 tablespoon lime juice, 1 teaspoon chili powder, ¼ teaspoon garlic powder, 1 teaspoon salt and ½ teaspoon pepper and spread over corn. This is a Guy Fieri recipe.

    I’m having a large number of my family come into town and making sure that I follow the below to provide a better holiday experience.

    1. Pack in Produce. Add fresh, roasted, or grilled produce adds to traditional fare. Mix up a colorful salad or skewer up veggie kebabs. Summer fruit can be grilled also and gives a natural sweetness. Beans tossed with vinaigrette and some diced vegetables makes a salad.
    2. Make a splash. Drinking water is the best way to hydrate especially with hot weather. Adding fruit gives more flavor. Seltzers, ice tea, and cold coffee also are refreshing.

    3. Don’t make meat the star. (Well, not sure I’m in total agreement with this.) There are many plant-based alternatives such as portabella mushrooms, eggplant, breadfruit and tofu. Grilled chicken, seafood, turkey or salmon or veggie burgers are good options too.
    4. Be food safe. Avoid food poisoning by keeping food cold or frozen. Pack the cooler tight with frozen containers. Use a meat thermometer to ensure it is properly cooked. It goes without saying that keeping your hands clean helps to prevent transfer of germs to yourself or others.

    Many years ago, the Cincinnati Enquirer had a contest for the pasta salad, potato salad, baked beans, etc. I kept the winners and have made several of these. Below is the recipes award-winning southwest potato salad (Bobby Flay’s restaurant potato salad is virtually identical) and baked beans. The chili lime livens up corn on the cob.

    Southwest Potato Salad
    Place 10-14 red skinned potatoes, washed and unpeeled in a pot with water covered by about 2 inches. Bring to a boil and cook 20-25 minutes. Combine 2 cups mayonnaise, 1 medium tomato chopped, ½ cup chopped onion, ½ green bell pepper chopped, 2 green onions chopped, 2 garlic cloves chopped, 2 TBLS. chopped cilantro, 1 TBLs. Dijon mustard, 2 TBLS. lime juice, 1 tsp. salt ½ tsp. pepper, and ½ tsp. cayenne pepper. When potatoes are done allow to cool to the touch. Cut into 6ths or 8ths and add dressing while still warm. Stand at room temp for 30 minutes then refrigerate up to two days.

    5-Bean Baked Beans
    Crisp ½ pound bacon and reserve 1 TBLS. drippings. Sauté 2 cups of onions in drippings. Add onions and crumbled bacon to 1-15 ounce can each of kidney beans, black beans, garbanzo beans, Bush’s Beans, and chili or pinto beans. Brown 1 pound of ground beef and drain. Lastly combine all with ½ cup vinegar, ½ cup chili sauce, 1 cup brown sugar, 2 cloves garlic mince. After mixing put all ingredients in large casserole dish and bake at 325 degrees for 1 hour.
