    On Monday December 2nd we will begin our annual 12 Days of Christmas. FOR MOST YOU CAN EITHER CALL OR EMAIL- NO NEED TO COME IN!!! The specials are listed below so you can plan accordingly. They will also be emailed the day before to remind you. The specials are good ONLY on that day.

    The 12 Days of Christmas
    (Our Annual Specials to celebrate the beginning of the Holiday Season)

    Day 1, Monday, December 2: RF (radio frequency) microneedling to tighten loose skin. Packages of three of one area saves $400 now $1850, two areas saves $500 now $2800, three areas saves $600 now $3650. Common areas include face, neck, chest, or hands.

    A HEALTHIER THANKSGIVING

    Thanksgiving is the beginning of the annual fight to avoid gaining weight during the holiday season. We feel guilty about the weight we put on but feel worse if we don’t partake in holiday meals, parties, and desserts. However, by emphasizing the healthier side to meals we can limit unnecessary calories or fat.

    Turkey and tenderloin are main courses that limit calories and fat compared to ham and other forms of beef. For example, 3 oz. of turkey has 110 calories and .5 g. of fat. Prime rib has 310 calories and ham 4.5 g. of fat. Don’t forget to remove the skin from the turkey and chicken.

    Emphasizing fruits and vegetables rather than potatoes and breads makes a meal healthier. Fresh vegetables and fruits especially before the main meal help to fill you and avoid higher caloric appetizers. Roasting vegetables reduces fatty sauces or butter. Substitute a vegetable soup for a more complex carbohydrate. Make your stuffing with whole-wheat bread. Cranberries, sweet potatoes, and green beans are nutritional but watch how they are prepared.

    (Did You Know? It is not the turkey that makes you sleepy after your Thanksgiving meal but the carbohydrates. They increase your insulin level which results in an increased level of tryptophan in the bloodstream and voila, naptime!)

    Dessert and alcohol, deathtraps for calories! Seriously, no one is expected to avoid these and moderation is the key. Alternate a glass of wine with a glass of water. Red wine has about 120 calories per glass. All desserts are not created equal. Minimize those with lots of calories. Pecan pie is high in calories, take the crust edge off pumpkin pie, and use Cool Whip over ice cream when adding to a dessert.

    Part of the enjoyment of the holidays is indulging in good food with friends and family. There is no reason to skip these pleasures. However, small changes add up and can make a big improvement in the way you would have looked in January without sacrificing.

    Wines for Thanksgiving: Not sure what to buy? I’m serving Hahn Pinot Noir, Kendall Jackson Reserve Chardonnay, and Joel Gott Sauvignon Blanc, all costing under $20 at Kroger. Other types of wine that go good with turkey are zinfandel, rose, Beaujolais, gamay, and chenin blanc. But don’t forget like every special occasion to start with a bottle of champagne or sparkling wine! 😉

    Ways of Cooking Your Turkey
    Of course, the oven is the most common way but I try to stay out of the kitchen and let the “sides” use the stove. Two years ago, I cooked turkeys three ways: hickory smoking with a Green Egg, spatchcocking one on the grill, and deep frying the third. This year I’m sticking with the smoking and deep frying. I am adding a ham that I will “bake” over indirect heat on the grill. Again, I stay out of the kitchen and take a glass of wine with me. Patients have told me about microwaving a turkey and cooking one “low and slow” on the stovetop. Any other interesting ways you have cooked a turkey?

    LA DOLCE VITA, JOIE DE VIVRE:

    Creamy Pumpkin Soup
    IN a large pot, melt 3 TBLS. butter then add 1 diced onion and sauté for 5 minutes. Add 1 minced garlic clove, 1 TBLS. brown sugar, ½ tsp. cinnamon, ¼ tsp. white pepper, ¼ tsp. nutmeg, and 1/8 tsp. cayenne pepper and cook for 3 minutes. Stir in 1-15 ounce can pumpkin puree and 3 cups of vegetable broth. Salt to taste and bring to a boil. Then simmer for 20 minutes. Sitr in ½ cup heavy cream and let cool for 10 minutes. Transfer soup to a blender or use an immersion blender in the pot and puree until smooth. If needed, add more broth for desired consistency. Can be made the day before and reheated. Serves 6.

    Turkey Cassoulet
    Preheat oven to 400 degrees. In a large frypan, fry 3-5 strips of bacon chopped into 1-inch pieces. Remove and set on paper towel when cooked. Add ½ – 1 pound of sweet Italian sausage and cook in bacon fat. When cooked put aside and cut in ½ inch pieces. Add one chopped onion to the same pan. When softened add 3 minced cloves of garlic. After about 30 seconds, add one 28-ounce can of whole peeled tomatoes and cook until they breakdown into a sauce, about 5-7 minutes. Add one can of drained cannellini or Great Northern beans and cook for another 5 minutes. Salt as needed. Mix the bacon and sausage with leftover turkey that has been chopped. In a 9 x 11 casserole dish or oven-safe pot layer the tomato-white bean mixture with the meat mixture until all have been used (for me it was 3 layers). Mix ½ cup of breadcrumbs with ¼ cup of olive oil (I added some parmesan cheese too) and top the cassoulet. Bake in oven for 15 minutes until mixture is bubbly and breadcrumbs are brown. Serves 6.
