    Mused after reading about a 95-year-old who has worked at the department store, Bergdorf Goodman for fifty years. Her reflections include a younger cliental and worse manners. I’m heading to NYC soon and may look her up to get her opinion on changes in men’s fashion over the years. Her picture is below.

    FABULOUS FERMENTED FOODS

    Fermentation occurs when microorganisms (bacteria, yeast, or mold) feed on starch, sugar or other food components. This was originally done for preserving foods. Examples are grains fermented to make beer and bread and wine is made from fermenting grape juice.

    Some of the health benefits suggest an association between fermented dairy products and weight maintenance. This is linked to a lower risk of type 2 diabetes, cardiovascular disease, and overall mortality. It is unclear whether this occurs from the organisms themselves or the alterations of ingested foods.

    (Did You Know? Sauerkraut contains live cultures. Cheese is fermented. Yogurt is the result of bacterial fermentation of milk.)

    Specific ways fermentation products help us:

    1. Adding to our gut microbiota. Some bacteria used in fermentation are called probiotics.
    2. Fermentation helps microorganisms break down food constituents. Bacteria break down lactose which helps those with a lactose intolerance digest yogurt and cheese easier.
    3. Deactivating undesirable compounds such as phytic acid. This binds to iron and calcium decreasing their absorption. Fermentation reduces phytic acid.

    Overall, fermented foods are delicious ways to add nutritional variety to our dietary pattern.

    KIMCHI, SPICY KOREAN CABBAGE

    Combine 1 head of Napa cabbage thinly sliced, 1 bunch scallions thinly sliced, 1 Tbsp of minced garlic, 1 Tbsp. grated fresh ginger, 1 Tbsp. red pepper flakes and 1 Tbsp. salt in a large bowl. Let stand 10 minutes. Pound the vegetables with a potato masher until enough juices are released to cover the vegetables completely. Pack the vegetables and liquid into a 1-quart mason jar and make sure the vegetables are covered by liquid. If necessary, add some water. Cover with a coffee filter held in place by a rubber band. Let stand at room temp for 3-5 days or until kimchi has desired flavor. Taste after day one. Once ready put tight lid on and store in refrigerator.
