      Mused after pulling together margarita recipes you’ve never had:

    Yuzu Margarita: 2 parts tequila, 1 part yuzu (Asian citrus), 1-part fresh lime and 1 part agave nectar.

    Tajin Margarita: 1 part tequila, 1-part fresh lime, ½ part orange liquor, ½ part agave, and 1/8 tsp Tijain seasoning (chilis, lime and salt)

    Kroger Margarita: (both sold at Kroger) 2 parts cucumber/jalapeno tequila and 2 parts Tres Agaves Margarita mix (only 68 calories in this mix)

     

    MEXICAN FOOD AND NUTRITION

    Mexican food dates back 2,000 years with roots in the Aztec and Mayan cultures.  Maize (corn), beans, squash, and chilis were grown.  These nutrient dense foods provided their food including maize and beans for all the protein they needed.

    Choosing nutrient, plant-forward ingredients such as vegetables beans, and whole grains.

    Veggies:  To the more common corn, potatoes, tomatoes, peppers, onion, avocado, and squash add tomatillo, jicama, chayote, cactus and poblano chilis.

    Beans:  Black and pinto provide dietary fiber and protein.  Refried beans not prepared in lard also can be nutritious.

    Whole Grains:  Select corn tortillas over flour or use whole grain (I use them for sandwiches).  Brown rice over white.

    Top with Flavor:  Kick up the flavor with salsa, guacamole, lime juice, onions and hot sauce.

     Try something new:

    Pozole: Previously I gave you a recipe for this soup with hominy, chicken or pork vegetables and chilis.

    Mole:  A flavorful sauce containing chilis, spices, fruits, nuts and even chocolate.

    Tamales:  Mexican sandwich consisting of corn meal dough filled with sweet or savory wrapped in banana leaves or corn husks and steamed.

    Ceviche:  Another recipe I’ve shared where seafood is “cooked” by marinating in lime juice.  Chilies, cilantro, tomatoes, and avocado added makes it delicious.

    LA DOLCE VITA, JOIE DE VIVRE

    Ultimate Street Fish Tacos

    Heat a skillet with 1 Tbls of olive oil, add 1 shallot and 3 garlic cloves both minced, a sliced jalapeno (with or without seeds for heat), and sauté about 5 minutes.  Stir in 11/2 cups of cherry tomatoes 3 Tbls of fresh lime juice and cook until the tomatoes have wilted and it looks like a loose sauce.  Remove from heat and add ¼ cup of cilantro.

    In a small bowl, combine 1 tsp paprika, ½ a tsp each of cumin, salt, and pepper.  Season 1 pound of white fish such as cod, tilapia, or halibut with this mixture.  Sauté the fish in a skillet with olive oil for 2-3 minutes each side until cooked.

    Warm 4-inch tortillas add fish and layer with the cherry tomato sauce.  Top with avocado and cilantro leaves.  Serve with lime wedges.
