  • Turkey Leftovers!

    Thanksgiving is just days away and most of us will over-indulge in food, drink, and football. Leftovers give us an opportunity to make amends. Here are some suggestions from Tufts University Health and Nutrition.

    Add vegetables to turkey. Stir fry veggies and add turkey with low sodium soy sauce, turkey tacos with beans lettuce and tomatoes or quesadillas, and turkey with Asian peanut butter dipping sauce chili sauce and lime juice with vegetables are all recipes. Turkey soup with vegetables is very easy.

    Adding turkey to white beans makes a terrific turkey chili. Other healthy turkey recipes include adding turkey to couscous dishes or fried brown rice and making a flatbread pizza with turkey, bell peppers, tomato slices, and light mozzarella cheese. Either tomato or low-calorie ranch can be used as the sauce.

    (Did You Know? Leftovers should be refrigerated within two hours after it finishes cooking. Reheat leftovers to 165 degrees. Both are essential to avoid eating dangerous bacteria.)

    Evens leftover turkey sandwiches can be made healthier by using low calorie sandwich bread, light mayonnaise, lettuce, tomato and other veggies.
